So I've been trying to incorporate more fish into our dinners. Oven fried fish we had one evening and we liked it - not loved it.. but tolerated it.
So a couple nights ago I made Tilapia Wraps. What a hit they were. Everyone like them... we'll definitely have fish this way again. You couldn't even tell you were eating fish!! Here's the recipe
Tilapia Wraps (courtesy Taste of Home's Simple and Delicious Magazine)
3/4 C. salsa
1 can (4oz) chopped green chilies - I didn't have any so omitted this.. but this would be yummy.
6 tilapia filet's
2 TBSP olive oil
2 TBSP steak seasoning
12 flour tortillas, warmed
3/4 C. shredded cheddar cheese
In small bowl, combine salsa and chilies; set aside. Drizzle fillets with oil; sprinkle both sides with steak seasoning. Transfer to a large skillet. Cook uncovered over medium heat for 5-8 minutes or until fish flakes easily with a fork. Add reserved salsa mixture, stirring gently. (At this point I flaked the fish in the pan and then mixed it all up) Spoon a heaping 1/3 C. onto each tortilla; top with cheese. (I plopped back in the microwave to melt the cheese a tad) Roll up and serve immediately. Yields 6 servings.

ok, so i need to have you over and make you some fish tacos.oooooh they are the yummiest! better than candy. I use tilapia too. Walmart has a box of frozen individuals. Tilapia is soooooo good for us too. mmmm is it dinner yet?
